Jam and Syrup

Today I added a Recipe for Dandelion-Flower-Honey (Syrup) at my Facebook and Twitter account ( http://www.facebook.com/fenrisstormdancer , @FenrisStormdanc )


Dandelion(Taraxacum)-Flower-Honey

ca. 1000 g Dandelion-Flowers
Juice of 3 - 4 Lemons
3 Liter Water
Sugar

wash Dandelinon-Flowers

boil up with water
let stand 12 hours

boil up again
strain

add Lemonjuice

weigh liquid

boil up 1:1 with sugar

boil ( at least 15 minutes )

pour into jars, seal immediately hot

ready

Tip: Add crushed vanilla pod before sealing

That's a very interesting recipe! I've only ever heard of dandelion leaves being used as food, but never the flowers!

Roses Jam / Syrup

4 - 6 Ltr. Rose blooms
3 Ltr. Water
1500 g sugar

Use very clean rose blooms, put them in a big pot... fill up with fresh. cold water and let stand 12 hours ( over night ) mix from time to time.

Next day :
Boil up ... cook 3 - 4 minutes and let stand 30 minutes ( covered ), seperate the Rose-Tea

Now you must have 3 Ltr. Tea ... if not fill up with fresh water .
Boil again with sugar for 10 minutes and fill in clean Bottles ..

For Jam : Use the tea ... and make a jam with a jam-gellant...
For Jam You need the juice of 8 - 10 Lemons

Cool! I've heard of them being used in a salad, but nothing like this! I'll have to try it out sometime... Smile
