This isn't the first time your Dad has pulled this kind of thing, unless I am mistaken? It sounds like he is in major denial about things and just wants to bury his head in the sand. Not only is that frustrating it could've had dangerous implications for your Mum so I am sorry that happened man.
As for your employer, if they get funny about you leaving because your Mum had a suspected stroke then yeah, they wouldn't be worth continuing to work for. Hopefully your feelings are off and actually they are ok.
