If you still want to be her friend demote her to a 'friend' that you
still talk to from time to time, but you're not as close to anymore.

I've had to do that a lot as of the last couple years and it's okay.
Some friendships aren't meant to last forever.

Friend-zone her dude, sounds to me like she's insecure and jealous because she wants you, she realizes she can't have you and she's going to make you miserable so that you won't leave her. I'd let the friendship die...my best friend and I have been friends for 8 years because I've never been jealous of her...hell I remember one opportunity where we had a contest to see who was better at...nevermind...what I mean to say is, maybe this is something you can work past if she understands that she cannot have you %100...you could always have sex with her, maybe if she had you in that way just once she wouldn't care so much anymore. Otherwise I'd just let her go for now, if she's a true friend she'll come back when she realizes she was being an idiot.

Today she was all giddy and being extra nice, talking about things like I couldn't see right through her... I know it's because she doesn't want to lose me as a friend but I just feel insulted. She's bad at covering things up.

Yeah, I think I'll be a little more conservative with the time I spend with her, maybe try and find more sincere friends in the process.
