You'll note that he removes the pieces from the wooden tray at the outset. Also, the camera angle isn't directly down onto the pieces, but rather low across them. Both of these things help gloss over the fact that each time he "removes" a square from the set, the "squares" along one strip are JUST a bit smaller than they were before. Your brain views them as the same size, but they aren't.
