Me too! Pumpkin Pie was always one of my fav's growing up.

I love pumpkin anything really. Candles, sprays, lotions, teas, coffees, ice creams, pies, candies...etc....

I LOVE butternut squash

Slice into
Inch thick medalions
Bake at 350 with a tiny dollop of butter, salt and pepper for ten to fifteen min until FORK tender

Yeah, I was torn between Squash and Eggplant.
Theres not really much variety in Eggplant, so I did Squash.

LOVE fried Eggplant though.
