SARS-CoV-2 RNA is detectable via PCR during a rather short time frame in the first week of infection maaaaaaaaybe during the second week. I assume that is from naso-pharyngeal swabs...lung sputum should have detectable viral loads for longer.
After that, you're good to go testing for antibody response to the virus in serum.
