Baked Sole stuffed with Crab Meat and Broiled Asparagus, brushed with olive oil and sprinkled with kosher salt. It was quite good. The best part? Mom cooked tonight!

Sautéed Dover Sole with Lemon-Basil Pesto, New Potatoes with Rosemary Butter and Brussel Sprouts.

Dinner Tonight: Grilled Mahi Mahi with Pineapple- Ginger Sauce, served with Mini- Bowtie Pasta with Mixed Vegetables, and fresh Watermelon wedges.

The sauce that I made for the Mahi was excellent! Very happy with how it turned out and Mark, my partner, and my Mom (who is visiting) loved it!

Breakfast Sandwich- Whole wheat English Muffin, egg, pepper jack cheese, slice of tomato, guacamole.

Chicken Tenderloins in Basil Pesto with Egg Noodles and a tossed green salad.

See this is why I need a man in my life to take care of me - I do such a pitiful job of taking care of myself....
