I've been vegetarian for about 4 years now, and I honestly feel better and much healthier than I ever did when I ate meat. Up to now I haven't had to take any vitamins or anything, I actually have a really strong immune system and I'm never bad, and if I ever am I recover really fast. So I can't say cutting meat out has had any negative impacts on my health as of yet.
It's not always easy though, like others have mentioned, it can be difficult when eating out. Usually most restaurants have a few vegetarian options but there's not a great deal to choose from. But apart from that, I haven't had any problems. I don't miss meat at all, and you can get the substitute stuff which (in my opinion) tastes pretty similar. I guess you could always give yourself a trial or something haha, and see how it goes!

The best advice I can give you is try it out for a month.
See how you feel. I am a vegetarian, the three men in my life are not. I usually shy away from these kind of threads, as I do not believe in imposing my way on any one else.

Hey, mrk!
I've been thinking about this stuff, too. I'm trying to eat less meat, my problem is that sometimes I crave steak! I don't think I want to give up fish though. Anyway, I'm trying to incorporate more veggies into stuff that I'm cooking and alter recipes so that I either eliminate the meat or just use less. I read this article in Runner's World, Eat Vegan & Run. I thought you might be interested in it as well. There are also a couple of recipes at the end. The burger one sounds interesting!

Almost all vegetarians used cheese to make their dishes taste better and be more filling which meant the vegans couldn't have it. So I made a point of making vegan dishes. As an example I'd make a refried bean dish with plenty of spices, mild peppers (including onion), salsa, tomatoes, a bit of olive oil, etc, and it was not only popular among the vegans but even many of the vegetarians went for seconds. Other dishes I recall making include baked falafel (with a lot of spices, among other things), aloo palak, and pad Thai (with extra peanuts & peanut sauce and a touch extra of red & green curry, holding the meat, eggs, fish sauce, and I also brought a bottle of Sriracha sauce with a sticky note on it warning that it was hot, but very delicious for those who can stand it).
