I enjoyed Chakin-zushi but haven't really tried much else.

Sushi and Unagi is what I lived on when I lived in Japan, haven't found a restaurant back in Australia that makes and serves it as good as in Japan, so don't get to eat it often.

I LOVE sushi, and I make my own sometimes at home. The hardest part is finding Sushi grade fish away from a coast. Where I live there are only a couple of places that I can get it and so far the only kinds of fish I found here are Tuna and Tilapia, which are good fish, but it's kind of limiting. That being said, the most important part of sushi is the rice. If you make the rice taste right the fish will seem less important. If you want to try to make your own just ensure you have a good source for Sushi grade fish and find a rice recipe that you like.
