Im going to be making some Cowpat Cookies for some birthdays.

Pretty much its just Chocolate Chewy Cookies, but giant ones, swirled into a round baking pan to look like a cow patty.

Hope they turn out ok.

Guys, keep it simple!

Here's something incredibly simple to prepare but delicious and exquisite:

TUNA FISH SOUFFLE

Saute an onion in olive oil until cooked. Add 2 tablespoons of flour, 3 dl milk and 1 medium can of sliced mushrooms. Add salt, pepper and nutmeg. Cook until thickened. Set aside.

Mix olives, 4 egg yolks and tuna (1 large can). Beat 4 egg whites until stiff and add to mixture. Put in the oven and bake for 15/20 minutes.

Et voilà!

Granny Annies Fried Squash Steaks

Ingredients:

Large yellow (or green) squash (large as you can find) - any amount
Buttermilk - enough for dipping squash in
Cornmeal - enough to coat squash steaks
Salt and Pepper to taste
Frying oil - any kind you like

Directions:

Wash squash and cut off butt tip and green head tip. Cut long ways into thick "steaks" - about 1/4 inch thick. Dry off sliced squash steaks and place flat in a flat bottomed dish, then coat with buttermilk until covered completely. Cover with plastic wrap or airtight lid, refrigerate overnight.

Place cornmeal, pepper, and salt in a ziplock baggie and shake vigorously to mix it up.
Pour mixture into flat dish with sides, preferably a pie plate or a casserole dish.

Heat up the frying oil (be sure you have a splatter screen).

Remove squash from fridge.

Take one squash steak out of buttermilk and quickly place in cornmeal then flip over to the otherside.
Flip once or twice more, then place into hot frying pan. Do this quickly with the rest of the steaks until the frying pan is full.

Cook one minute on each side for firm squash, two minutes on each side for fully cooked squash.....or until cornmeal is golden brown.


Excellent with pork chops and applesauce, or as a meat alternative itself with a salad and sliced tomatoes.

Richard's Brunch Date Benedict
4 eggs
1 stick of butter
I round of sourdough bread
Butterkase
2 Lobster Tails
Kosher Salt
Pepper
Whole Nutmeg

Make the hollandaise sauce, two egg yolks, beaten, very slightly warmed in a double boiler, then drizzle melted butter a tiny bit at a time until about 1/4 cup has been incorporated, whisking CONSTANTLY.after the sauce is set you can rest or switch arms and
Add the butter in larger doses i usually do 3 after set. Then incorporate about 1/8 cup of melted butterkase.

Bake the lobster tails with butter and lemon juice. 350 for ten to 20 min the meat should be firm but not hard.

Toast the bread in the oven on a skillet or baling sheet 350 3 min per side.

Prep the water for the poached eggs. At least 4 inches of water. Two tsp or so of vinegar bring to a boil, reduce to a shiver.
For those who don't know a shiver is when the water barely moves.

Place the Bread on the plate.
Drizzle a little sauce.
Shred with a fork or loosely chop the lobster meat.
Put it on the bread.
Drizzle.
When he gets there, pour him a Mimosa, pour you one.
Them poach the eggs.
Place the poached egg in top. Cover with the rest of the Hollandaise
Enjoy

Cooking tricks -

Love the "fried" part of meats or veggies, but cant eat them because they ARE fried?
Use "Shake N Bake" or a similar product. You can even develop your own. Get the "fried" feel and taste without all that oil.

Instead of bread for sandwiches, use lettuce leaves. You can use them like bread slices, or roll up the lettuce leaf with the stuff inside, or make lettuce rolls.

Chocolate alternative -- Carob. Very similar to chocolate, but requires a LOT less sugar or sweetener to get it sweet. Actually has a very good taste.

Make your own ice cream, pop sickles, or frozen treats. You know whats going into them....as opposed to all those extra chemicals and additives they put in store bought ice creams and treats. Plus you can make your own custom flavors.
