I love my iPad3 and I'm always looking for new apps.
My favorites:
Dropbox
This is not just wonderful, it's essential for any iPad user. Dropbox allows you to store all of your files (documents, images, etc.) in a cloud (external server), giving you access to them at any time from any device you like (PC, laptop, mobile, smart device).
I believe iTunes does something similar but it's less versatile (i.e. you can share less files) and it's not free.
Zite
Customized newspapers are wonderful and Zite is probably the best there is. It's free, it's easy to use and the elegant layout is just gorgeous. What makes it truly unique, though, is the quality of the associated online newspapers, e.g. the NY Times, Rolling Stone Magazine, the Guardian.
Kindle
You don't need to spend money on an e-reader to be able to enjoy all those wonderful ebooks from Amazon. Use your iPad instead and download the free Kindle app. Ebooks are great (cheaper, much easier to store) and mobi is my favorite format.
