Icelandic even though it would be largely useless in my day-to-day life. I love it there and part of my novel is set there, so it would be cool to be able to read literature as it was written. Most people there speak at least some English but it would also be fun to understand the slang, etc., and participate in conversation like a native.
Italian would be fun too, and more practical.

Russian for sure. I took it in high school as it was the only foreign language they offered and it was mandatory. But I always enjoyed the language with its unique cadence. My best friend is a native Russian speaker and I have another 2 friends who are also native speakers, so it'd be a nice additional way to communicate with them.

French, it would save me the hassle of struggling through learning it now and enable me to speak with my boyfriend's family members that are monolingual.
