One of the easiest and also one of my favorites is a hamburger but I cook mine a bit different than a classic burger.
I take the ground beef and add a mixture of red wine, malt vinegar, minced garlic, salt and pepper, and a bit of bread crumbs to bind everything together. Then I mix it and marinade for 30 min to one hour. Pan fry it in a cast iron skillet and serve it on good quality bread with tomatoes, spinach, arugula and some good cheese topped with a bit of brown mustard. Takes about 90 minutes total including marinade time.

Another one of my easy favorites is thin crust pizza
Make the crust from 3.5 cups of flour, 1 tsp of instant yeast and 3/4 tsp of salt. Mix 9 oz of good water and 1 TBSP olive oil. Hand mix on the counter til dough forms.
Set dough aside in fridge uncovered to set, then turn oven on with stone inside to pre heat at 500 degress F for one hour
While oven is heating mix sauce. Roughly chop 4 large tomatoes, mince 4 cloves of garlic, and add approx1-2 TBSP of oregano flakes to taste then salt and pepper to taste. Simmer in a saucepan, once simmer begins add 1/2 cu[p red wine, reduce for 30-45 minutes till thickened.
Once sauce is ready hand flatten dough til round, then add sauce, toppings and a ratio of 2/3 mozzarella 1/3 either pecorino romana or asiago your choice.
Turn oven off and place pizza on top of stone and cook for 12 minutes.
Remove, place on cooling rack, grate a bit of Parmesano Reggiano over top, let cool for 5 min, then cut and serve.
Did it today took about two hours total was delicious.

Something easy I have a lot on workdays is just a nice little fish fillet with rice and vegetables.
When I get home I take the fish out and add lime juice, then let it sit while I do everything else. Then I'll take some rice, I usually use a nice brown long grain type, about 1/3 to 1/2 cup per person depending on how hungry you are, boil the rice with salt and butter, and then any type of fresh stove top vegetable like green beans or snow peas, and give them a nice cooking on the stove. Once the rice and veggies are done I take the fish fillet, season it with salt and pepper and anything else you enjoy, them pan sear it should take no more than a minute or two over medium high heat n a good skillet. All told from the time you hit the door to the time it hits your plate is about 30 minutes.

1. Fajitas (pronounced “fuck eaters”!) with anything and everything. Get the Mexican sauce to go with it.
2. Pitta bread pockets with everything, toasted. Toast them before putting fillings in.
3. Bought puff pastry with cheese, tomato, olives, salt and pepper. Bake in oven at 220C or gas7 for 10 minutes.
The cooking is only half the battle. The shopping is equally important. Choose the best ingredients you can afford: if unsure take advice.
