Any one know anything easy to cook?

I'll see what I can contribute...

If you can cut and peel vegetables decently, then this shouldnt be terribly hard:

1 Butternut Squash
3 Carrots
3 Parsnips
1 Red Onion
White Wine Vinegar, 2 tbsp
Salt and Pepper, pinch
Extra Virgin Olive Oil, 2-3 tbsp
Honey, 1-2 tbsp
3-4 Cloves Fresh Garlic, chopped
Fresh Thyme
Fresh Rosemary, chopped
Fresh Italian Parsley, chopped

Halve, seed, and cube the butternut squash, put in a large baking sheet pan. Clean, peel, and dice the carrots, and place in pan with the squash. Next, peel and dice the parsnips, adding them with the carrots and squash afterwards. Finally, peel and dice the onion into larger pieces, adding it to the mixture. Add the coarsely chopped garlic to the vegetable mixture. Mix the root vegetable and garlic spread evenly across the sheet pan to prepare for baking. Next, strip leaves from thyme twigs and sprinkle over vegetables, and afterwards add the chopped rosemary. Next, add the freshly ground salt and black pepper to the mixture, and drizzle with the vinegar. Finally, drizzle olive oil and then the honey over the vegetable mixture. If desired, hand stir the mixture to mix everything together.
Preheat oven to 400 degrees. Place sheet in oven and bake for about 25 minutes or until the vegetables are fork-tender. Stir vegetables around as desired in process of cooking. After removing from oven, garnish with freshly chopped Italian Parsley. Serve on plates.

Its very good and well worth the effort, and makes several leftovers...is there like a 'favorite recipes' thread on here?

You mention butternut squash one of my favorite vegetables the way I cook it almost tastes like sweet potatoes.
First I set the oven to preheat to 375 degrees, then I peel the squash and cut it into medalions about 1/2 inch thick. I season both sides of the medalions with a bit of butter, salt and pepper, then once the oven is nice and hot I bake it for about 8 minutes, then flip over the medalions on the baking sheet and bake the other side for another 8 minutes. Comes out beautiful.

my favorite quick meal is a quick white sauce over noodles. corn as a side-dish, my favorite vegetable, tastes great with the sauce. :biggrin: the white sauce recipe is reeeeally simple:

1 Tablespoon butter
1 Tablespoon flour
1/8 teaspoon salt
dash of pepper
3/4 cups milk

melt the butter over low to medium heat, then mix in dry ingredients. add all the milk at once, and stir slowly over medium heat until it thickens. it doesn't thicken very much, just a little. when doubling or tripling the recipe, add about 1/8-1/4 cup less milk for thicker, richer tasting sauce. makes approximately one serving.

i like to add a little terragon and generic italian seasoning to the butter as it melts, and all-spice or seasoned salt with the dry ingredients. i also add a poorly-measured tablespoon of cornstarch to help it thicken a little. also, adding a little crushed red pepper to the noodles as they boil spices it up a little.

Ok i have a recipe for a low fat desert thats fast and easy to make.

Take 1 sachet of [Image: 5000354160943_200.jpg]

Mix it with half of the water so 1/2 pint instead of a full pint. Add in a full tub of Quark mixing it in until the whole thing is liquid[Image: 008247.jpg]

Leave to set for an hour and you have a sort of blamonge or cheesecake without the base sorta pudding. Tastes great, is very filling and is very cheap and almost fat free.

I love good desserts, but I am terrible at making them. I can cook a lot of things but desserts seem to elude me, I think its because you have to make sure all your measurements are exact and I am kind of a chaotic cook I cook by instinct rather than by formula.

baz, i've never seen either of those Smile it looks like jelly and cream cheese though. or is it jello and cream cheese? i know that jello and whipped cream is a good dessert, but not filling at all.

Of course PA, its also possible to do it traditionally but if you are a dizzy queen like me and easily distracted, its better in the microwave: nothing is worse that sticky rice. I sometimes substitute tomatoes for the apple.

Perhaps we'll have to give that a go next week then Xyxthumbs We'll have everything else in the house, but I've never cooked artichokes. Are they available at the moment?
