I'll see what I can contribute...
If you can cut and peel vegetables decently, then this shouldnt be terribly hard:
1 Butternut Squash
3 Carrots
3 Parsnips
1 Red Onion
White Wine Vinegar, 2 tbsp
Salt and Pepper, pinch
Extra Virgin Olive Oil, 2-3 tbsp
Honey, 1-2 tbsp
3-4 Cloves Fresh Garlic, chopped
Fresh Thyme
Fresh Rosemary, chopped
Fresh Italian Parsley, chopped
Halve, seed, and cube the butternut squash, put in a large baking sheet pan. Clean, peel, and dice the carrots, and place in pan with the squash. Next, peel and dice the parsnips, adding them with the carrots and squash afterwards. Finally, peel and dice the onion into larger pieces, adding it to the mixture. Add the coarsely chopped garlic to the vegetable mixture. Mix the root vegetable and garlic spread evenly across the sheet pan to prepare for baking. Next, strip leaves from thyme twigs and sprinkle over vegetables, and afterwards add the chopped rosemary. Next, add the freshly ground salt and black pepper to the mixture, and drizzle with the vinegar. Finally, drizzle olive oil and then the honey over the vegetable mixture. If desired, hand stir the mixture to mix everything together.
Preheat oven to 400 degrees. Place sheet in oven and bake for about 25 minutes or until the vegetables are fork-tender. Stir vegetables around as desired in process of cooking. After removing from oven, garnish with freshly chopped Italian Parsley. Serve on plates.
Its very good and well worth the effort, and makes several leftovers...is there like a 'favorite recipes' thread on here?
