I'm looking for my master cookie recipe. In the meantime:
These are not glamorous but they were a traditional thing for my family at Christmas. Damn good with a cup of milky tea.
Mrs. Evans' Welsh Currant Cookies
Cream:
1 1/2 cups sugar
1 cup butter
Mix dry ingredients:
4 cups flour
1 teaspoon freshly ground nutmeg
1/4 teaspoon baking soda
1/2 teaspoon salt
2 scant teaspoons baking powder
Mix wet ingredients:
2 eggs
1/2 cup milk
Alternate mixing wet and dry ingredients into creamed mixture
Add 1 cup dry currants
Roll dough out on floured board to about 1/4-3/8 inch thickness, cut with biscuit cutter
Bake cookies on a seasoned and very lightly greased griddle, turning when edges are dry, as with pancakes.
They will be sort of mottled brown and dough color. Little teacakes and not too sweet.

A friend of mine sent me this recipe earlier this week,,, and it sounds great!!
Roasted Carrots and Mushrooms with Thyme
Ingredients:
8-10 oz. carrots (I used 4 medium-sized organic carrots; you can use baby carrots, but whole carrots are more flavorful.)
8 oz. sliced mushrooms (I buy the pre-washed kind, but wash if needed)
2 T extra virgin olive oil
1/2 tsp. dried thyme or 1 T chopped fresh thyme leaves
salt/pepper to taste
fresh chopped parsley for garnish (optional)
Pre-heat oven to 450 F
Instructions:
Peel carrots if desired. Cut carrots on diagonal into slices about 1/4 - 3/8 inch thick. Toss carrots with 1 T olive oil, thyme, salt, and pepper. Spread on large roasting pan (it should be big enough that the carrots are in a single layer). Roast carrots 15 minutes.
While carrots are roasting, wash mushrooms and spin dry or dry with paper towels. Slice mushrooms into even slices, slightly thicker than carrots. Using the same bowl as you tossed the carrots in, toss mushrooms with 1 T of olive oil.
Remove carrots from oven, stir, add mushrooms and roast 10-15 minutes more. Serve hot, sprinkled with fresh parsley if using.
