What did you have for dinner

tonight was some pizza

Made a noodle stir fry. I fried up some chicken in peanut oil, added some broccoli and then scrambled in some eggs, cooked some rice noodles and added those. I used a bottle of Hoisin sauce. I thought it came out too bland for me, but ma loved it. She thinks mayonnaise is too spicy, so I left out my favorite Szechuan sauce. At least I learned Hoisin is okay for her

I put a sweet potato in the oven to roast, then I headed over to the greenhouse. I picked zucchini, kale, collards, cucumbers, snap peas, green beans, and basil. Made some basmati rice with cardamon in the Instant Pot. Then cooked up the veggies in a little water, added in tofu, some tamari. Put the veggies over rice with some toasted sesame oil. Had the roaster sweet potato on the side. I already had a cucumber at lunch so I guess I will save them for another meal. Nice to have food in the greenhouse, because it is still freezing here in the mountains. Fresh food is the best!
