Hi guys,

As requested. I warn you though, these stuff are deliciously fattening. :biggrin:

Ingredients (For chocolate balls)
  • 1 packet Marie or Rich Tea biscuits, crushed into powder
  • 1/2 cup coconut (optional)
  • 2 tablespoons of cocoa powder
  • 1 can of condensed milk
  • Wooden Sticks (I prefer big 'chopstick' like wooden sticks because I make big balls)

Ingredients (For Coating) - Optional Really
  • 1 Van Houten cooking (baking) chocolate
  • 1 cup of chocolate chips or chocolate sprinkles or coconut or 1 cup of Walnuts, crushed

Method

  1. Mix all ingredients for chocolate balls together and roll them into small or big balls.
  2. Insert wooden sticks into your chocolate balls.
  3. Melt Van Houten cooking (baking) chocolate in a small saucepan over low heat. Cook until smooth, stirring occasionally.
  4. If you make small balls, you can just dip your balls in, swirling to coat evenly. But if you make big balls, you have to use a tablespoon to coat them.
  5. Van Houten (cooking) baking chocolate dries very quickly. So once you've coated 1 chocolate ball, immediately sprinkle it with chocolate chips or chocolate sprinkles or coconut or 1 cup of Walnuts. You only coat your second chocolate ball when the first has been sprinkled.
  6. Place your chocolate balls on a tray and store them in the refrigerator to harden and chill. Serve cold.

Recipe Note
  1. I used a food processor to crush the biscuits.
  2. I used a knife instead of a food processor to crush the walnuts. I don't want my walnuts to be squashed into powder. Just use a knife or a rolling pin to crush walnuts into smaller pieces.

I think on the 14th Feb i am going to give it a go at making these.... Do these require going in the oven or is it done on the pan if so what temperature in Cels please as my oven doesnt have fairenheit...

Ive decided tonight in stead of waiting till 14th im gonna try them tonight for a change as ive baked another loaf of bread this time white and i want to make my first sweet... Just re read the receipe jay and it doesnt require oven which is fab hehe gonna be looking forward to this

Pancake Day today, so here's the recipe for Crêpes that I like to make (taken from a great French chef)! Oh, by the way, easy and quick to make...
Ingredients:
* 250 g of white flour (plain, not self-raising)
* 1/2 litre of milk (you can use semi-skimmed or full cream milk)
* 3 large eggs
* pinch of salt
* 50 g of butter
* 2 tablespoons of sugar (and or a packet or two of vanilla sugar)
* vanilla essence or powdered vanilla pod (that's my personal touch)
* 2 tablespoons of brandy, or cognac, or some other alcohol of your choice (Grand Marnier, or Cointreau, or some sort of liqueur will probably work just as well.)
Method:
Start by breaking the eggs into a large bowl and whisk them with your pinch of salt, then add some of the flour (sieved) and stir till it gets a little pasty, then some of the milk to dissolve the pastiness, then more of the flour (and it'll reach the same pastiness again), then more milk to dissolve it etc... finish by adding all the milk. The pancake batter is actually fine as it is and could be used as such.

The rest is all finishing touches, but oh, what a great taste will ensue!!

Add the sugar, the vanilla, and the brandy (or whatever happens to be your choice. Note that you can also omit that bit of the recipe if you'd prefer your crêpes not to have any alcohol (even though it is worth remembering that the alcohol content will burn right off in the pan)). Then add the 50 g of butter slowly melted in a saucepan or in a microwave oven.
Whisk the batter all together. There should be no lumps after this treatment. Leave the batter aside for about 20-30 minutes, if you can wait.

In a flat pan, butter the bottom using a piece of kitchen towel or piece of clean cloth (to be discarded after cooking),. I'd recommend that even for a non stick pan. Pour in an adequate quantity of batter so as to make a thin layer once the pan is nice and hot. It'll sizzle and seize immediately so twist the pan around a bit so the batter reaches all corners. Then you can flip the pancake over, if you have that hand gesture down pat, lol, or just turn it over with a spatula once the underside is done and brown. Cook the other side the same way.

If you are going to put anything like grated cheese or something that needs warming up inside, then put it in while you're cooking the second side... If not, fillings can be as varied as your imagination can provide. Chocolate, or chocolate spreads are good, jams, maple syrup, walnuts and honey, ice cream can be a nice addition. These pancakes are also superb on their own or with a little bit of melted butter and a sprinkling (not too much of that) of sugar.

My own favourite fillings are mushroom and Madeira sauce and red pepper and tomato sauce, grated cheese and nutmeg, honey or maple syrup and (wal)nuts, melted chocolate and vanilla ice cream, melted butter and sprinkling of sugar, lemon juice and sprinkling of sugar, but as you can see I've got lots of favourites.

hello Jay,
I gave it a go and to buy the ingredients cost me £7.40 except i replaced cocoa powder with cheap hot chocolate powder as i refuse to pay £4.10 for a small pot of the stuff.. I did them and found breaking up a whole packet of rich tea rather...... BORING lol took 20 minutes to break every single buscuit into dust in a pack of around 40 rich teas lol... I forgot that the condesed milk is really sticky and felt wierd trying to make the balls but i succeeded with it. Of course they were all different sizes but the shop didnt sell sticks so i didnt bother with them... They turned out really nice and i decorated them with alsorts of things edible and find that i can only eat one a day for pudding as they are VERY sickly lol...

I need more dessert receipes Smile

hehe yes Jay. The receipe was great it is sickly in a thing that means you only have one after dinner not two lol... I like to try all different types of dishes and set up a folder on my computer now titled recipes so i can copy and paste them and give them a go
