I haven't tried any sweets but I'm looking for a granola bar recipe. What about Alton Brown's Chewy Chocolate Chip Cookies? He's pretty funny and I like how he explains things. Here's the recipe on Food Network: The Chewy.

So this is a recipe I got from Runner's World. I've been wanting to try lentils because of the protein but I had no idea how to cook them. This recipe had two of my favorites: spinach and mushrooms so I decided to give it a try. I thought it was great! Had the leftovers tonight and it warms up great. It's super easy.
Lentils and Rice ½ package lentils ½ box of instant brown rice 1 cup thinly sliced onions 1 cup spinach ½ cup sliced baby mushrooms 2 tablespoon of golden raisins Cook the lentils by simmering in water for 20 minutes. When the lentils are almost cooked, microwave your rice and heat up a small amount of olive oil in a large pan to sauté the vegetables. Add the onions to the pan first. As they turn golden, add mushrooms and then the spinach last. Once the spinach begins to wilt, mix in the lentils and rice. Add the raisin for the last two minutes. After mixing all ingredients, add cinnamon, salt, and pepper to taste. ~~~~~~~~~~ Problems I had. >The recipe didn't say how much water to cook the lentils in, but I used about 3 cups. When I tasted them, they needed salt so I added a ½ tsp of salt while they were cooking. >We had just bought a bag of brown rice, not instant, so I had to adjust things and get the rice started first. Not a big deal but thought I'd mention you didn't have to use instant. >I packed the measuring cup with spinach but I think I'll add more next time. It kind of disappeared. But, I might have over cooked it. >Eat as soon as it's done, because it thickens really fast. >We sprinkled the cinnamon on a sample and tasted rather than just adding it to the whole thing. It was good but we preferred it WITHOUT the cinnamon. >The raisins make this dish! I had never cooked with raisins before and was blown away. It doesn't contain a lot of them but when you get one in a bite it's a little surprise and delicious! >Makes approximately 4 servings. Definitely making this one again! :biggrin:

Ok, so I'm trying to get back to some grilling. Did some salmon for the first time and I'm pretty happy with how it turned out. Very light. mile: I brushed both sides of the salmon fillets with Canola oil, salt/peper the flesh side. Lightly oil the grill grate. I seared the flesh side for just a minute and then placed it on the skin side. I use indirect grilling here, so closed the lid and checked it after 8 minutes. Ended up taking about 10 minutes. We're trying to eat more brown rice so we needed to get rid of the white rice. :tongue: I love rice and butter. But we need veggies, too! :biggrin: So, sauted onions in some margarine, then added one sliced zucchini and one sliced yellow squash. I microwaved some baby carrots for about 6 minutes and then added those. Meanwhile fix the rice and after it's done add it to the veggies and cover. Mix well and then simmer a bit. The onions make this so sweet! I'm going to miss my white rice.

Does anyone have a lot of expertise with making vegetables more interesting?
Not a vegetarian, but I try to include a lot of vegetables in my diet and I find it's hard to make common vegetables more interesting than just the normal steaming or blanching or baking. Anyone have any ideas? Richard

I made this in my office today. Well at least the chicken. I cooked the brown rice on Sunday's night.
It wasn't a plain cooked brown rice. I cooked my brown rice for 30 minutes top with ginger, onion, garlic, extra virgin olive oil, tomatoes and a lot of herbs. Then I cooled it off for a few minutes and mixed the rice with tempeh (Soy product like Tofu), mini cubes of roasted chicken and walnuts. Then I topped the rice with black pepper. I stored the brown rice in a fridge for a day. As for the chicken - The idea came out spontaneously. Lean chicken blended with cayenne pepper, a number of herbs, salt, extra virgin olive oil, lemon juice, tomatoes, sprinkle of cheese, ginger, onion and garlic. I microwaved the chicken for around 20 - 25 minutes. That was it. It probably doesn't look that appetizing via photos but it was really tasty. It was really spicy though as the main ingredient for the chicken was cayenne pepper. Lots of it. I didn't jot down the recipe when I made it. But thankfully I remember every step and every ingredient. I'm terrible at giving recipes though. |
