Avatar the last air bender was great. I really enjoyed it. I hear they're going to make new episodes of what happens after the war. They made a comic which I read, so making that animated would be awesome! - The legend of Korra was good, though not as good as the original series.
Think I've seen two episodes of Elfen Lied and it looked good. Not sure why I stopped watching it though.
Recently finished watching Kbooom! The last episode was quite disappointing, although I have no doubt there will be a second season, which hopefully will be just as good.

I try to watch anime when I can. I have to be in the right mood to sit down and watch several episodes though. I think I just feel overwhelmed by the amount of shows I want to tune in to.
Crunchyroll.com is a great website for streaming anime. Unfortunately it comes with a monthly subscription, but it helps keep anime alive.
My favorite by far has to be Avatar the Last Airbender. I grew emotionally attached to the characters and easily found myself viewing episode upon episode. The Legend of Korra was great too!
Other favorites of mine include Naruto, Code Geass, High School of the Dead, Moribito: Guardian of the Spirit, and Xam'd.
H.O.T.D. was absolutely absurd haha. Complete fan service, but hilarious.

I haven't unfortunately, but i might have to give it a watch. With there only being 4 episodes it shouldn't take me too long ^_^ I started watching Mouretsu Pirates when it first started to air, but after the first three episodes I got a little bored of waiting for it to kick in to the main storyline. I'll have to watch the full series as I think it looks like it may have potential.

As for Evangelion... I kind of like it, but it's pretentious as hell. I feel like the writers clearly understood how to create psychologically deep characters, which is great, but as soon as they tried to introduce philosophy to their storyline everything kind of fell apart.
End of Evangelion is even worse. I DID enjoy it because of the ehrm... unforgettable imagery and amazing music but God... dishing out irrelevant religious symbolism to come off as deep is NOT okay. Also, a lot of things from the story was based on concepts from the GAMES, so a lot of things are impossible to understand with the anime alone.
As far as psychological characterization and symbolism goes I'll always prefer Utena! c:
