It's just a commonly-accepted abbreviation ... that particular one pre-dates netspeak I think ... it's more a texting abbreviation, used when people wanted to keep the character-length of their text messages (and thus the price of the texts) down.

I don't see anything wrong with saying nite ... or luv as another example - as they're not hard to understand.

It's when people start going hardcore like ...

Actually, probably not, and as you've probably learnt too there are lots of unpronounced letters in French (nowadays) like final S's, which is something that French people learning English don't get... It's quite annoying to be constantly reminding my pupils to pronounce those final S's.
However we are not talking of the same thing here, my dear Carl.

We are talking about writing a simple word with its accepted spelling so as not to confuse people who do NOT know the language or understand it as you or I do... I can work out NITE to be "night" and since we are not using limited characters on this site (sight???) there isn't much reason for deliberately misspelling unless we are playing on words (which is also acceptable, or trying to put on an accent variation etc...) It seems to me that we ought to keep the language as standard as possible for people who (like Sudanese, maybe) are learning the language and might not get the opportunity to decode what we are talking about. Anyway, there isn't much point in saving the one letter in NIGHT... For me spelling is also a question of courtesy, really. People looking for a translation would be hard pressed to understand absolutely every word we utter here. So it is thinking of them, more, that I would make the (slight) effort to spell properly. If we don't know the spelling, then, that's another matter; But I know WouldLikes knows how to spell "night"!
