OP, there are a lot of ideas here. In the practical way, the ones that seem useful to me are the conversational gambits. But there is more, a lot more. As you read it let's hope that you realize how really complicated this whole thing is and that you are young and have time to work with it all.
In the meantime, keep it simple. Do things with the guy like talking after class about the class or going to get a cold drink or some coffee. Just hang out. You will get a much better picture of what he is like that way rather than an awkward discussion. Like, I say, keep it simple. You have time.
