I use Nestlé's Chocolat Dessert but don't know if that is available to you.
INGREDIENTS You will need (for 6 - 8 portions):
(if making a half portion - for 2 to 4 people - you can use half proportions)
* 200 grammes of good cooking chocolate
* 6 fresh eggs
* 1 pinch of salt
* for optional flavouring we'll discuss this at the end.
METHOD
* Because eggs react better when they are warm, you should ideally use them at room temperature, so take them out of the fridge in advance.
* You need to melt the chocolate gently over a double boiler, or in the microwave oven (a short stay in the MW will do the trick, but don't add any water).
* Separate the egg whites from the yolks.
* Add the egg yolks into the melted chocolate and stir well...
* You may observe a change in the texture at that point. To this mixture you can add your optional flavourings. I like to add some orange essence - a small teaspoon, or some grated orange rind, or some candied orange peel cut up in small pieces - then if you are adventurous you can also put in a table spoon of Grand Marnier or Cointreau... you can flavour this with coffee extract, vanilla, peppermint essence, lemon essence or peel... glacé cherries, etc...
* Now put the egg whites in a cooking bowl that is large enough with a pinch of salt and beat well with a whisk or electric beater until light, firm and fluffy.
* Add the chocolate yolk mixture to your egg white and fold the mixture in lightly. When all the egg white has been well mixed (don't overdo this though, since you want to keep the texture) pour into one big dish or several little ones. Keep in fridge for at least 2 hours.
* For a personal touch you can garnish once it's been refridgerated. I did mine with mandarin segments on top this time. mile:mile:mile: But hundreds and thousands or Smarties are also fun.
