A fruity summer....
All of yous guys in summer locations right now...heres a couple of recipes for having a cool fruity summer. Recipe 1 Red, White, and Berry 1 cup small chunk fresh pineapple 1 cup fresh blueberries 1 cup thick sliced bananas 1 cup small chunk apple (any kind) 2 cups fresh strawberries, cut in half 1/2 cup chopped walnuts 1/4 slivered almonds 1 Tablespoon amaretto flavoring 1 large tub Cool Whip (regular, creamy, sugar free, or french vanilla and NOT frozen) Clean, dry, and cut up fruit and place in large mixing bowl. Sprinkle flavoring over fruit and gently toss for a minute or two. Fold in chopped nuts. Gently fold in Cool Whip until all fruit is covered. Place in plastic, airtight bowl with lid. Put in fridge for a couple of hours. Serve in chilled bowls or parfait glasses. Margarita glasses also work for this. *you can make fruit substitutions to taste. *************************************************************************** Recipe 2 Cool Melon 2 Honeydew or Cantaloupe melons 1 small box of flavored instant gelatin (any flavor) 1/2 can of fruit cocktail, drained 4 Tablespoons of vanilla ice cream Cut melons in half and clean seeds and remnants out. Slice a small piece off the bottom of the melon half so it can sit up like a bowl. (a really good deep center melon is good for this purpose, shallow center melons dont hold much) Put one cup of water in a pan and bring to a boil, take off heat. Whisk in gelatin until completely disolved. Mix in vanilla ice cream until completely melted. Mix in 1/2 can fruit cocktail. Place melon halves on a large tray or sturdy plates. Spoon in mixture into the melon cavities. Let chill for at least 3 or 4 hours. *Really good for summer treats or a fruity lunch. *You can also substitute cottage cheese for the ice cream. *Cubed pieces of baked white fish also work in this recipe.

I made this on wednesday. It was really good but it was a shame I didn't get it eat it fresh, it would've been better that way. Nevertheless I used up that big batch of creme fraiche I made over the weekend and it was delicious.

Now for a recipe.....
Lime Chicken Soft Tacos 1 1/2 pounds skinless, boneless chicken breast meat - cubed 1/8 cup red wine vinegar 1/2 lime, juiced 1 teaspoon white sugar 1/2 teaspoon salt 1/2 teaspoon ground black pepper 2 green onions, chopped 2 cloves garlic, minced 1 teaspoon dried oregano 10 (6 inch) flour tortillas 1 tomato, diced 1/4 cup shredded lettuce 1/4 cup shredded Monterey Jack cheese 1/4 cup salsa Directions Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer for an extra 10 minutes. Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.

If you have a box cake mix you should:
1 Double the eggs/add 2 eggs witch ever is less. Or Replace the egg whites with egg yolks if it asks for a whole egg (its a 2:1 ratio white to yolks or for a 2 oz large egg About 1.33 oz whites .67oz yolks) 2 replace oil with the same amount melted butter 3 Replace water with milk (whole is best flavor) 4 Add 1 instant pudding mix Of the same-ish flavor or add what flavor you want (If you have a white cake mix you can mix any type of pudding and it will become that flavor BUT it will not be very strong) |
