If I'm ever in the hospital my BF will be bringing me food. I've seen hospital food. I always think, "People eat that?!"

Here's the FINAL diagnosis from specialists.
I was definitely exposed to some form of cholinesterase inhibitor that set off the whole episode. The exposure must have happened Saturday night or Sunday morning when I was feeling awful and throwing up. That led to me losing my appetite and that set off my borderline hypoglycemia and feeling worse plus everything else. I didn't get to the hospital until Monday so most of the inhibitor was out of my system but I was still having the effects from it. All the way home from Iowa my truck heater smelled weird. I'll check that out tomorrow -- with precautions and help -- when I get home.
I feel GREAT now so stop worrying. YAY!

If it was ethylene glycol poisoning, maybe you would like to consider using propylene glycol antifreeze in your truck. It is much less toxic. If you had a weird butterscotch type smell from your heater, it's possible that your heater core is leaking and you were breathing eg fumes.
Carbon monoxide poisoning might be worth considering and discussing with your doc. Check your truck's exhaust system for leaks and check your heaters in the house too if they are gas or propane. You might want to consider installing a carbon monoxide detector in your home just to be sure.
