As much I would love to push her under a bus, I'm not really the confrontational type. I think I'll just stick with saying 'Hi' if I see her, but maybe with a knowing smile.

I love all the responses here and agree with all the posters , in your position though I would find it very amusing to make a point of saying hello to her and been even more courteous - that would really get under her skin for been the bigot she is, and others will then ask why and you can tell them the truth - on the other hand...just ignore her and enjoy your life totally free of her
