Last night I had Spaghetti Bolognese. But with pasta instead. So pasta bolognese I guess. With grated cheddar on top

Richmond vegan sausages... were quite tasty... with mild NY mustard ontop and some steamed veg on the side!

Mom made eggplant parmesan. A lot of our Italian dishes are usually Americanized, I prefer meatballs on spaghetti and my pasta to swim in the sauce, but we keep our eggplant parm fairly traditional. The thinner the eggplant slices, the better. I can never find true eggplant parm at restaurants, the eggplant slices are always thick.

@LJay I can't come up with an exact recipe right now. It takes some work because you have to coat all the eggplant pieces and fry them. As I said, you want the eggplant slices to be thin, which makes for a lot of slices that all have to be individually coated. Start with fresh eggplant, cut them into a bunch of circular slices, kind of kind like potato chips but you don't have to go that thin, and coat them in breadcrumbs (eggs,flour breadcrumbs, I forget the order). Fry them all in a fry pan, careful because they're delicate. They're tasty at this point. Mix them in a pan with your favorite spaghetti sauce, and cover it all with grated parmesan. Put aluminum foil on it and bake it. It always takes us us longer to bake stuff than the directions so I don't know how long.
It's a simple, albeit tedious, recipe, and how it comes out all depends on what touch you gave it. It tastes fine with simple prego sauce, but if you have a better sauce, go for it. My mom uses whatever cheese she gets her hands on, and I've told her plenty of times swiss cheese doesn't belong on Italian food, though I've been spoiled with food. Parmesan is in the name, so that's what's supposed to go on top, but I prefer asiago as a substitute to parmesan. Asiago just has this flavor I like.
