I don't see any danger of your relationship being based solely on sex. You obviously love each other too much. If things do get sexual again, I would not stop the sex necessarily but just ask him if he wants you to continue. If saying "I love you" is too much maybe you could tell him what an amazing guy he is - just from time to time.
